About Peking duck restaurants in Singapore

Peking duck is about skin, and skin is about time. The bird is inflated to separate skin from fat, scalded, coated in a maltose syrup and air-dried for many hours before it ever sees the oven. That drying is what produces glass-like crackling, and it cannot be compressed — which is why almost every restaurant here requires the duck to be ordered a day or more in advance.

Singapore has a genuinely deep field, from long-established hotel Cantonese dining rooms to imports from Beijing and Hong Kong. Most serve it in two or three courses: skin first with pancakes, then the meat stir-fried or minced, then a soup from the bones.

What to look for

  • Pre-order. Most kitchens need at least a day, and the ones that do not are almost certainly not air-drying properly.
  • Skin should be served first and separately, with sugar on some menus. Eat it immediately — it softens within minutes.
  • Ask what happens to the rest of the bird. A second and third course from the carcass is standard and often where the value is.
