About prata shops in Singapore

Prata is dough, ghee, heat and a great deal of practice. The dough is rested for hours, flipped out thin enough to see through, folded and griddled — and the entire quality question is whether the shop still does the flipping or has moved to frozen sheets. Both exist, often on the same street, and the difference is immediately obvious.

The other axis is crispy versus fluffy, which is a real split rather than a quality ranking. Some shops griddle hard for shatter; others aim for a soft, layered interior. Order kosong — plain — at a new place, because it is the version with nothing to hide behind.

What to look for

  • Watch whether they flip the dough. Frozen prata is fine and cheap; it is not what the queues are for.
  • Kosong first. Egg, cheese and onion all mask a mediocre base.
  • Curry matters as much as the prata. Most shops give fish curry by default — ask for mutton or dhal if you prefer, most will oblige.
