About chilli crab restaurants in Singapore

Chilli crab is barely spicy, which surprises almost every visitor. The sauce is tomato, chilli and egg, sweet and thick and built for dipping — the crab is arguably the vehicle and the mantou is the point. It is also Singapore's most expensive commonly ordered dish, usually priced by weight, which makes it the one where knowing where to go actually saves money.

It is priced by the weight of live crab, which is a volatile market, and the good restaurants use larger mud crabs — often Sri Lankan — that cost considerably more per kilo. The sauce is cheap; the animal is not.
