About dumpling restaurants in Singapore
Dumpling here covers a lot of ground: northern Chinese boiled jiaozi with thick, chewy wrappers; pan-fried guo tie with a lacy crust; and the chilli-oil-drenched Sichuan style that has spread rapidly across the island in the last few years. They share a technique and very little else.
The wrapper is the honest measure. Hand-rolled dough is uneven — thicker at the pleated seam, thinner at the edges — and has a chew that machine wrappers cannot reproduce. Stalls rolling their own tend to say so, and it is usually why they are on a list.
What to look for
- Boiled dumplings show the wrapper most clearly. Frying hides a multitude of sins under a crust.
- Chilli oil should have sediment and aroma, not just heat and colour. It is made in-house at any place worth the trip.
- Ask whether they are folded on site. The good stalls have someone visibly doing it all day.
