Singapore's wine bars have moved a long way from the hotel-cellar model. The current scene is dominated by small rooms with short, opinionated lists — a lot of natural and low-intervention wine, a lot of by-the-glass, and food that is designed around the bottles rather than the other way round.

Storage is the invisible problem here. At this temperature and humidity, wine held badly degrades quickly, so the places worth returning to are the ones that have invested in proper cellaring — and it shows in what they are willing to open by the glass.

What to look for

  • A long by-the-glass list signals confidence in storage and turnover. It is the most practical quality signal there is.
  • Ask the staff to pick. These rooms are staffed by people who chose the list and would rather talk about it than take an order.
  • Preservation systems or Coravin on the back bar mean older or pricier bottles can be poured by the glass.

Why we count instead of ranking

Every food list is one person’s palate on one visit. That is not a flaw — it is what makes food writing worth reading — but it does mean a single list tells you more about the writer than about the field.
