About nasi padang stalls in Singapore

Nasi padang came to Singapore from West Sumatra and settled here so thoroughly that most people forget it is Indonesian. The format is a counter of pre-cooked dishes eaten over rice — superficially like cai png, but the cooking is entirely different: coconut, turmeric, galangal and chilli, mostly slow-braised, mostly built to sit and improve rather than to be served the moment it leaves the wok.

Rendang is the benchmark, and a real one is dry rather than saucy — the coconut milk should have cooked all the way down and darkened, which takes hours most kitchens will not spend. A wet, curry-like rendang is a much younger dish wearing the name.

What to look for

  • Judge the rendang on dryness and colour. Dark, almost caramelised and clinging to the meat is the sign of a full reduction.
  • Sambal goreng and beef lung are the dishes that separate a serious stall from a competent one. Both take work nobody sees.
  • Ask for extra gravy over the rice — kuah — the way regulars do. Most stalls will not offer it unprompted.
