Gelato differs from ice cream in two measurable ways: less air churned in, and a serving temperature several degrees warmer. The result is denser and tastes more intensely of whatever it is made from, which is why gelaterie live or die on ingredient sourcing rather than technique alone.

Singapore's scene has taken a distinctly regional turn. The most-cited shops build flavours from pandan, chrysanthemum, lychee, gula melaka and Asian botanicals rather than reproducing an Italian cabinet — which is both more interesting and considerably harder to balance.

What to look for

  • Covered tubs and flat, dull-looking gelato beat towering, brightly coloured mounds. Height and gloss are air and stabiliser.
